Esta \u00faltima nos servir\u00e1 para la decoraci\u00f3n cort\u00e1ndola en juliana fina. Terminar el filete con un toque de horno a 180\u00ba por un par de minutos.<\/li>\n<\/ol>\n<p><strong>Para el salteado de hongos<\/strong><\/p>\n<p><strong>\u0418\u043d\u0433\u0440\u0435\u0434\u0438\u0435\u043d\u0442\u044b<\/strong><\/p>\n<ul>\n<li>50 gr de aceite de oliva<\/li>\n<li>1 diente de ajo picado<\/li>\n<li>5 tallos de perejil<\/li>\n<li>3 pz de setas Shiitake deshidratados (hidratados en 50 ml de vino blanco)<\/li>\n<li>1 pz de hongo portobello mediano<\/li>\n<li>2 pz de setas blancas<\/li>\n<\/ul>\n<p><strong>\u041f\u0440\u043e\u0446\u0435\u0434\u0443\u0440\u0430<\/strong><\/p>\n<ol>\n<li>Picar finamente el ajo y las setas en tiras finas.<\/li>\n<li>Acitronar el ajo en el aceite de oliva junto con los tallos de perejil para aromatizarlo. Retirar los tallos de perejil y agregar las seta Shiitake picadas en juliana.<\/li>\n<li>Saltear durante 5 minutos las setas Shiitake y agregar las dem\u00e1s setas.<\/li>\n<li>Dar un salteado de 3 minutos a fuego vivo y dar el punto de sal. Agregar el agua de remojo de los Shiitake y reservar.<\/li>\n<\/ol>\n<p><strong>Para la salsa de 3 quesos<\/strong><\/p>\n<p><strong>\u0418\u043d\u0433\u0440\u0435\u0434\u0438\u0435\u043d\u0442\u044b<\/strong><\/p>\n<ul>\n<li>\u00bc de cebolla picada<\/li>\n<li>50 ml de vino blanco<\/li>\n<li>1 hoja de laurel<\/li>\n<li>1 gr de sal de grano con pimienta molida y nuez moscada molida<\/li>\n<li>100 ml de crema<\/li>\n<li>40 gr de queso Grana Padano rallado fino<\/li>\n<li>40 gr de queso Manchego de Oveja rallado fino<\/li>\n<li>50 gr de queso Azul<\/li>\n<li>L\u00edquido de remojo de las setas Shiitake<\/li>\n<\/ul>\n<p><strong>\u041f\u0440\u043e\u0446\u0435\u0434\u0443\u0440\u0430<\/strong><\/p>\n<ol>\n<li>Tener todos los quesos rallados finamente.<\/li>\n<li>Poner al fuego la cebolla picada finamente, junto con el vino blanco, la pimienta, la hoja de laurel y la nuez moscada. Dejar reducir casi hasta su totalidad.<\/li>\n<li>Agregar la crema y esperar a que rompa el hervor y poner el fuego a m\u00ednimo.<\/li>\n<li>Agregar los quesos y dejar que se incorpore todo el conjunto hasta conseguir una crema un poco espesa.<\/li>\n<li>Dar el punto de sal necesario. Colar y reservar.<\/li>\n<\/ol>\n<p><strong>Ingredientes para decoraci\u00f3n<\/strong><\/p>\n<ul>\n<li>15 gr de queso Grana Padano rallado<\/li>\n<li>Perejil picado<\/li>\n<\/ul>\n<p><strong>\u041f\u0440\u043e\u0446\u0435\u0434\u0443\u0440\u0430<\/strong><\/p>\n<ol>\n<li>Cortar cada filete en cuatro trozos.<\/li>\n<li>Colocar en el centro de un plato el salteado de hongos y colocar encima los 4 trozos del filete en el t\u00e9rmino deseado.<\/li>\n<li>Salsear con la crema de 3 quesos y espolvorear el queso rallado y perejil
